I created this delicious, lemony, tart-sweet bread pudding using a lemon cake from my local bakery where everything is baked fresh and without any preservatives. In a large bowl whisk together flour, sugar, baking soda, and salt. If it begins to darken/burn, cover with foil for remainder of baking.

Fill greased or foil-lined muffin cups three-fourths full. Add to flour mixture stir just until moistened. In another bowl, whisk eggs, milk, melted butter and lemon juice until blended. Cut a strip of parchment paper long enough to cover the bottom and two ends for easy removal. Spray 9 x 5-inch loaf pan with cooking spray. In a large bowl, whisk the first five ingredients. This is one of those recipes that you will seriously stand by the counter and eat directly out of the pan before any of it ever makes it to a plate! Coat a 9x5-inch loaf pan with non-stick spray. My husband is also very grateful, gobbling down each of my berry-lemon/limoncello creations.

I am unapologetic about this current craze going on my kitchen. Bake in preheated oven for 50 to 60 minutes, until a toothpick inserted into center of the loaf comes out clean. We just can’t seem to get enough fresh blueberries and blackberries in our tummies lately! We’re just obsessed with these berries, especially in how they compliment another obsession in our family: lemon! Stir the flour mixture into the egg mixture alternately with the milk.
